I usually like to keep things light around here, but today’s post is going to be tinged with a little melancholy.
Mr. Nomato is headed back to Louisiana tomorrow morning, and I’m staying behind.
We knew this whole med school thing would be hard, and most of the time we can just get through it. I mean, we’ve gone some pretty amazing places and done some pretty amazing things. Every morning Mr. Nomato gets closer to his dreams. He’s going to be a fantastic doctor. But some days it just feels too immense.
June is so far away. I know it will pass quickly. Just not quickly enough.
“What does this have to do with these blondies?” You ask, “I came for the goods, not for a sob story!” These were one of only two things on a “MUST EAT BEFORE I LEAVE” foods list. That’s right. Among all of my crazy, delicious, amazing recipes, this is one that made it on the list. This and the Ground Beef Stroganoff (which I have been informed is his ‘last meal’ request) are the only two that were specifically requested.
So I made them.
And they’re amazing. All gooey and rich, the blondie part stepping back to showcase that sweet caramel and hint of chocolate. It makes sense why he would request these. Who wouldn’t? They’re an adaptation of the infamous Six Sister’s Stuff Butterfinger Blondies.
But I’m going to stop talking now and let my photos do the work of convincing you that these are seriously spectacular. I have some major laughter and cuddles to get in before tomorrow and don’t want to spend another second apart before I have to.
Crush your chocolate/caramel of choice. (Fellow Canadians, SKOR bars work AMAZINGLY). In this recipe I used Crispy Crunch bars!
Just a heads up, this batter is THICK. You will look at it and think you did something wrong, don’t worry, you did not!

They are complete perfection.
You know you need a tower of blondies in your life!
Or maybe just one perfect one.

- 2/3 cup butter
- 1/3 cup milk (soy/almond works too!)
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 2 tsp vanilla
- 2 eggs
- 2 1/2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups chopped chocolate bars! We love Skor bars , they're perfect (but only available in Canada I think)! Crispy crunch also work well, or rollos!

Preheat oven to 350°

In a bowl, mix butter and sugar. Add the rest of the wet ingredients, and mix thoroughly.

Add your dry ingredients, and mix.

At the end, gently stir in your chopped chocolate bars.

It is a VERY thick batter (can you even call it that?), so spread it as evenly as you can on the bottom of a greased pan.

Bake for 30-35 minutes, or until a toothpick comes out clean.
