Enjoy a taste of Greece with these marinated Mediterranean Chicken Kebabs! Marinated in yogurt and mixed spices overnight and grilled to perfection, they’re juicy, tender, and incredibly flavourful.
There is a Mediterranean restaurant near where we live that makes the most amazing chicken kebabs. These things are so tender, so juicy, and they practically fall off the skewer. I dream of them. I pine for them.
Unfortunately they are covered in peppers soooo I have been determined to at least approximate a recipe, and I think I’ve done it!
The best part is that these are ridiculously easy to make (provided your grilling skills are up to par and… erm… better than mine… which is not very hard!).
Mix up the yogurt and spices, and toss them with the cubed chicken in a ziplock bag. Smoosh until completely covered. They’re best if you leave them overnight, but an hour or two should do.
Then… skewer them! If you use wood or bamboo skewers, remember to soak them for at least half an hour before you use them. I managed to fit about four pieces on each skewer.
Not going to lie, this part was alternately really fun and mushy, and slippery and frustrating.
But it’s totally worth it.
And I’m not going to lie and pretend that I’m a grill expert… or that I’m not terrified of the BBQ (shhhhh). But even I can’t ruin these! I put them on medium heat and grilled them first on one side, then the other. Basically until I cut them open and they were cooked through, about 5 minutes, sometimes longer for the colder spots on the grill. Sorry, that’s all I got for ya!
They turned out perfectly! Juicy… tender… practically exploding with flavour. I used chicken breasts, but they can turn a little tough if you overcook them, so chicken thighs are also an excellent grilling alternative!
Sorry restaurant with the delicious kebabs, we can make our own now!
