This Lemon Bread with Lemon Glaze is the perfect sweet bread to bring to any potluck. Light and fluffy with a sweet sugary top, it never fails to bring a smile!
Real talk time. I’ve been struggling a bit lately with everything, to be completely honest. The news is overwhelming, and there’s just wave after wave after wave of fear, hatred, and negativity. When I was little, I always felt like everything will turn out okay in the end. Or it was easier to ‘unplug’, instead of feeling like we’re standing at the end of a firehose of hate. Lately that seems harder to hang on to than ever, and I’m one of the privileged ones.
The good thing is that there are some pretty amazing things going on all around us, if you take the time to look. Last month in my journal I had a list of things that I was grateful for. This month, I have a list of things that give me hope. Looking for something every day that makes me feel like love is winning helps, if even a little bit.
(Annnd NASA announced today that they found 7 new exoplanets, including 4 possibly liveable ones, so I figure if it gets too bad, I’ll just head that way. Won’t take too long, right? Easy peasy, lemon squeezy.)
I think one of the things that has given me the most hope is the outpouring of love and unity shown by my fellow bloggers, and fellow foodies, who have taken the saying of ‘build a longer table, not a higher fence’ to heart. Food is how we connect with others. It’s how we show our love, our experiences. What is the main meal at my house is not the same as yours, and that’s something to celebrate!
Some of my fellow Food Bloggers of Canada are meeting in cities across the country, bringing their favourite meal to share with each other. So far there are none organized for the East Coast, as we are few and far between, but this is what I would bring. My family recipe for Lemon Bread!
To me, this lemon bread is a reminder of summer days, happy days, always served with a big cup of tea. It never fails to make me smile – and it makes everyone else smile too! Too bad it never lasts very long in this house…
It’s so quick to toss together. Just blend everything together, stick it in a loaf pan, and bake for an hour. The smell is heavenly, and it will fill your house with sweet lemon as it bakes into a beautiful golden loaf.
Now, you could just stop there. Really. Plain, it’s still freaking delicious! But the glaze… the glaze is truly my favourite part of this.
Drizzled with lemon juice and sugar, the top of the bread turns into slightly crunchy bliss. I always save the top of my slice of lemon bread for last – especially if it’s eeeever so slightly under-cooked and just a little bit doughy! (Don’t worry, the times below reflect the actual time, not my raw-er time. )
A single slice can make things better. ‘Cause if life gives you lemons, make lemon bread!
What would you bring to our potluck?
- Lemon Bread
- 1 cup white sugar
- ½ cup shortening OR butter (if using margarine, use block margarine)
- 2 eggs
- 1 lemon rind
- ½ cup milk
- 1½ cup sifted flour
- 1 tsp baking powder
- ½ tsp salt
- Lemon Glaze
- ¼ cup sugar
- ¼ cup lemon juice (~the juice of 1 lemon)
- Heat your oven to 325°F.
- In a mixing bowl, cream the sugar and shortening.
- Add the eggs, lemon rind and milk, and mix until combined.
- Stir in the sifted flour, baking powder and salt, and mix until combined. The mixture should be a stiff batter that keeps its shape.
- Spoon the batter into a greased loaf pan, and bake for 1 hour.
- In a bowl, mix the sugar and lemon juice, stirring until the sugar has dissolved. Pour the glaze over the bread while it is still warm.
- Let cool completely before cutting and serving.
