Le Bilboquet Microbrasserie is a brewpub in Saint-Hyacinthe, Quebec. Le Bilboquet produces nine unfiltered beer in their regular line-up. They use malted barley, wheat, hops and yeast – no chemicals or sulfates! Their beer is available on tap on-site at the pub, or to-go in bottles. Due to provincial liquor regulations, bottles cannot be purchased on-site, but you can pick up bottles at various dépanneurs near the brewpub.
My favourite from their line-up surprised me – a light, strawberry beer brewed seasonally. I am not traditionally a fan of fruit beer, but theirs had the intoxicating scent and taste of a fresh strawberry without any syrupy sweetness. We also loved the space. It was huge, with pool tables, dimmed lights, and televisions playing sports in one half of the bar. The other half, where we sat, was warm and bright with vivid art lining the walls. We didn’t have time to try the menu, but it was classic comfort food – nachos, grilled cheese and hot dogs. They also have charcuterie boards available.
