Four Banana Muffins

Fluffy muffins with, count 'em, FOUR bananas!

  • 4 overripe bananas
  • 1 tsp salt
  • 1 cup sugar (you can bring this down to ½ cup if you prefer)
  • 1/3 cup melted butter or margarine
  • 2 well-beaten eggs
  • 1 teaspoon baking soda
  • 1 tbsp hot water
  • 1 ½ cups flour
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 2 cups OPTIONAL ADD-INS: chocolate chips , blueberries, cranberries, carob chips... whatever you want!
  1. Preheat oven to 350°
  2. In a large bowl, mash bananas until there are no lumps.
  3. Add salt and sugar, and mix thoroughly.
  4. Pour in melted butter and eggs and mix thoroughly.
  5. In a small cup or bowl, mix the baking soda with the boiled water, and then stir the mixture into the mixing bowl.
  6. Add flour, baking powder and vanilla, and stir until completely mixed and lump free.
  7. Add your mix-ins and stir until evenly distributed
  8. Grease a muffin tin, and fill each cup about ¾ full with the batter.
  9. Bake for 18-20 minutes, or until the toothpick comes out clean.
  10. Enjoy trapping your unsuspecting victims with SURPRISE muffins!
