Savory Oatmeal with Bacon, Eggs and Chives
Get your day off to a good start with savory oatmeal. Topped with bacon, eggs and chives, it'll show you a whole new way to enjoy your breakfast!

Ingredients
  • 1/2 cup rolled oats
  • 1 cup water
  • 2 slices bacon , chopped into about 1/2" slices (more crispy edges!)
  • 1-2 eggs
  • 1 sprig chives , chopped
  • dash black pepper (or to taste)

Microwave Oatmeal Instructions
  1. Add you rolled oats and water into a large bowl, and stir a couple times with a fork. (Trust me, a large bowl - this will expand while you're microwaving and will make a mess if the bowl is too small!)
  2. Cook in the microwave for 1 minute, then stir, then 1 more minute, then stir. If necessary, another minute. There should not be any water in the bowl, and the oats should be cooked all the way through. (If doubling or tripling this recipe, it may take anywhere from 4-6 minutes of microwaving!)
Stovetop Oatmeal Instructions
  1. Bring the water to a boil in a pot. Add the oats, and cook for one minute. Remove from heat and cover for about five minutes, until cooked.
The Toppings
  1. In a pan on the stove, cook bacon according to instructions on the package. I like my bacon CRISPY, so it usually takes about 5-7 minutes.
  2. Pour out the fat from the pan into a heat-safe container to cool (I like to use an old can), and add the egg(s) to the pan. It will cook in the leftover fat from the bacon, so no extra butter needed! Cover the whole pan with a pot lid so the top will cook, as well as the bottom. This should take about 2-3 minutes. An over-easy egg is my favourite way to eat this, but if you like your yolk cooked all the way through, cook for 3-4 minutes.
  3. Carefully transfer the egg to the top of your oatmeal, add the bacon, chives and black pepper.
