This Lemon Bread with Lemon Glaze is the perfect sweet bread to bring to any potluck. Light and fluffy with a sweet sugary top, it never fails to bring a smile!

Lemon Bread

white sugar

shortening OR butter
(if using margarine, use block margarine)

lemon rind

milk

sifted flour

baking powder

Lemon Glaze

1/4
cup
sugar
-
1/4
cup
lemon juice
(~the juice of 1 lemon)

Heat your oven to 325°F.

In a mixing bowl, cream the sugar and shortening.

Add the eggs, lemon rind and milk, and mix until combined.

Stir in the sifted flour, baking powder and salt, and mix until combined. The mixture should be a stiff batter that keeps its shape.

Spoon the batter into a greased loaf pan, and bake for 1 hour.

In a bowl, mix the sugar and lemon juice, stirring until the sugar has dissolved. Pour the glaze over the bread while it is still warm.

Let cool completely before cutting and serving.
