Happy Friday everyone, we made it!
This week’s lunch was a challenge, I can’t believe we’re already near the end of our New York stay! Only three weeks to go and we’re already starting to eat all the random things in our cupboards. For some reason we ended up with SO MUCH RICE this time… I don’t know how we’re possibly going to finish it.
So here’s this week’s lunch featuring, you guessed it, rice!
Lunch: Lemon pepper chicken with black beans, white cheddar cheese and rice over some arugula. There’s enough here for lunch AND any snacks he might need!
Dessert: Chocolate covered granola bar
