YAY FRIDAY! We made it!
As I mentioned in my last post, we’re trying desperately to figure out what is causing a sudden lunch flare-up with Mr. Nomato’s allergies AND trying to clean out the the cupboards at the same time, so inventiveness is the word of the day month!
This week I’ve been inspired by all the ‘caprese salads with fruit instead of tomatoes’ that I’ve seen around the internet, and decided to give it a whirl. It just looks so fresh and pretty. And it was met with RAVE reviews. You’ll also notice that there’s no smoothie with this one, yay elimination :I
Lunch:
Caprese salad with watermelon, mozzarella, spinach, oregano, basil and green onion. Olive oil and balsamic vinegar will be added later. And of course, a roll to sop up all the delicious leftovers at the end!
Dessert:
Red, seedless grapes.
