Okay that’s it. I’m done. I’m handing in my sandwich… making… tools… (knife? spatula? Panini press?)

This is the best sandwich I have ever made, and I’m never ever ever going to top it. Ever. I know that’s not saying much, since my go-to sandwich is like… PB&J, but believe me. I know a good sandwich when I eat one, and this is it.

And this sandwich… glorious. Seriously. I think it gives my BLC a run for its money!

First, a shout out to this salmon. This is the most flavourful, smokiest, most delicate strong flavour (yes it makes sense) I’ve ever eaten in my life. Not fishy at all, but 100% smoky salmon. And it’s from just down the way! Shop local if you can, my friends! You never know what treasures you might find!

Now to the runner-up, the anchor, if you will: a loaf of freshly (and I mean FRESH) baked bread.

Toss a sprig of dill on there, because salmon and dill are best friends.

And of course you know I can’t let a week go by without some avocado.

Sprinkle some capers and some green onions. Capers will give the sandwich a bit of umami flavour – that certain ‘I don’t know’ that adds more depth and complexity to an already fantastic dish. I had three people at the grocery store try and help me track these down, and we finally found them with the canned fish! Weird.

Squish the two halves of your sandwich together. This sandwich, unfortunately has little to no structural integrity, so try to handle it gently! In hindsight I probably could have stuck toothpicks in it to make my life easier, but I cook with a certain amount of… um… reckless abandon, so toothpicks never even made it on the radar. (Hang on, green onion! Just hang on!)

Into the pan you go for a little light toasting! Set on low, this will warm up every single bit of this sandwich and give it a nice CRUNCH! You could also pop it in the toaster oven if you’ve got one. Or a panini press…

You need this sandwich in your life, my friends. You need it.

Smoked Salmon Sandwich
A sandwich packed with (mostly) healthy fats and toasted to perfection!
Course: Lunch
Servings: 2 sandwiches

Ingredients
  • 50 g (1.8 oz) smoked salmon
  • 2 Tbsp cream cheese
  • 2 sprigs dill
  • 1 avocado
  • 2 tsp capers
  • 1 stalk green onion (or to taste)
  • 4 slices freshly baked bread to make two sandwiches.
Instructions
  1. Assemble your sandwich with cream cheese first, then dill, smoked salmon, avocado, capers and green onion. If desired, secure with toothpicks!
  2. In a frying pan or on a toaster oven with a tray, heat at a low temperature until lightly brown on both sides. Flip if necessary (be careful!)
  3. Serve!
