Yay it’s Friday! Welcome to Lunch of the Week! This week’s lunch has a southern flair with a delicious po’ boy sandwich. YUM.
Snack
Snow peas and cucumbers with Sabra brand Classic hummus
Lunch
2 wedges Original Laughing Cow Swiss Cheese and baby carrots (I have gone a little carrot happy lately, my fridge is FULL. I just keep thinking they’re used up! Serves me right for not checking before grocery listing.)
Po’ Boy sandwich stuffed with pan-cooked chicken, Cabot brand white cheddar cheese, lettuce and broccoli sprouts, topped with homemade remoulade sauce.
Nutty Chocolate Peanut Butter Shake (goes in thermos):
– 1/2 scoop Chocolate Protein Powder
– 1/2 banana
– 1 tbsp Chocolate PB2
– 1 tsp Carrington Farms Flax Chia Blend
– Silk brand unsweetened vanilla almond milk
Dessert
Mixed fresh watermelon and cantaloupe
