Who doesn’t love hummus?

Garlicky, fresh, delicious hummus.

It’s so versatile, you can eat it with vegetables, with chips, dollop it on a sandwich to give it a little kick, or even just have at ‘er with a giant spoon.

And this recipe is so freakin’ easy, it almost feels like cheating to give it to you as one of your weekday recipes.

I’m telling you, it takes 2. Minutes. Just 2. That’s it. Then you’re done! And most of that 2 minutes is you sitting back and watching it blend! You know what that means?

Darn right.

I’m making this, of course, in my Magic Bullet Blender (my nomad lifesaver), so if you want to double (or triple or quadruple) it, for a real sized blender, knock yourself out!

Let’s get to it!

First, drain a can of chickpeas (aka garbanzo beans, which I think is a much more fun name), keeping about 3 tbsp of the juice from the can. Then dump that juice and all the peas into your blender.

Then, add what you want for flavour. I choose garlic! You can also add pine nuts, more lemon juice, some tahini, cilantro, feta cheese, cumin, sesame seeds… there are so many options, but for today I’ll stick with the basics. We’re going to add some garlic, olive oil, lemon juice and salt.

Ready? Set, BLEND! For 1 minute. If you notice that for some reason it’s stopped actually blending the ingredients, turn it off and give it a little stir. It’s thick so it might give you some trouble at first. Once the minute is up, assess your situation. It should be completely smooth, with no parts of chickpeas. If it’s not there yet, stir it with a spoon and blend it again for about 20 seconds. Aaaaand one more time if necessary!

Smooth hummus, easy and perfect for dipping!
Course: Snacks

Ingredients
  • 1 can chickpeas (aka Garbanzo beans)
  • 1 head of garlic , minced
  • 2 tbsp olive oil
  • splash lemon juice
  • dash of salt
Instructions
  1. Drain the can of chickpeas, saving 3 tbsp of juice from the can.
  2. Pour chickpeas and the saved juice into your blender (or food processor)
  3. Add garlic, olive oil, lemon juice and salt into the blender
  4. Blend for 1 minute, stopping the machine and stirring with a spoon if you notice for some reason that it's not blending anything anymore. It's really thick, so sometimes it will clump a bit on the sides.
  5. Assess the hummus. If it has lumps in it, give it a stir with a spoon, and continue to blend, stopping every 20 seconds or so to stir again until completely smooth.
  6. Serve with vegetables, chips, pita bread, on a sandwich or a burger... it's up to you!
