The holidays always bring with them a kind of a stress. It’s a wonderful stress, though. The stress of loved house guests, of preparing a marvellous meal with all your favourites, of making sure the lights on the house are just so. Labours of love, I’m tellin’ ya!

With all that going on, you really don’t need a complicated breakfast. Good thing I’ve got an easy one for you!

Fry some delicious things. Dump in a slow cooker along with a couple other things. Wait. Eat amazing fluffy eggs stuffed with all your favourites!

I mean, really, what delicious breakfast doesn’t have eggs? From the traditional fried egg/scrambled egg/omelette standbys to slightly more complicated things like this amazing Cinnamon and Brown Sugar Coffee Cake, eggs are so versatile,  they’re an essential ingredient in all my baking and a lot of my cooking!

Here in Canada we get our eggs from over 1,000 local farm families, so they’re super fresh, no matter where you live. They’re delivered to your store in under 5 days, so even if you live in the middle of nowhere, your eggs are still local and some of the highest quality in the world!

And this baby uses 14 of them. You heard me. 14 eggs. But we’re getting ahead of ourselves! First things first!

Lay out your sliced sweet potatoes on the bottom of your slow cooker, so as much surface area as possible is touching the heating surface.

Then lay out your cooked bacon and whatever other veggies you choose to put in. Mushrooms and onions are my favourites, and the low, slow heat makes those onions caramelize even more! YUM.

Now it’s time for those 14 eggs! Whisk ’em, like you’re making scrambled eggs, and then just pour those babies over top!

And sprinkle some cheese on top, because cheese makes everything better, let’s be honest here.

Now set your timer to 4 1/2 hours, and try not to break into the thing too early. It will be very hard. This will make your kitchen smell amazing. If you have a warmer or a timer on your slow cooker, you can even cook these overnight and have them waiting for you when you wake up! It’s like someone made you breakfast. Everyone knows those are the best breakfasts! Alternately, they’re amazing for brunch, or you know, that late breakfast after everyone opens presents!

Cut yourself a nice giant square! The eggs puff up like they’re a cloud. A beautiful, eggy cloud. Because of the low, slow heat, they aren’t rubbery at all, and with all the amazing things you put in, the flavour really comes with a kick!

Slow Cooker Breakfast Casserole
This easy Slow Cooker Breakfast Casserole features fluffy Canada Grade A Eggs cooked to perfection with all your favourite ingredients!
Course: Breakfast
Servings: 6 -8 servings

Ingredients
  • 1 sweet potato (or regular potato), sliced thinly
  • 5-6 strips bacon
  • 1 small onion , sliced
  • 5 medium white button mushrooms , sliced
  • 14 eggs
  • 1 cup shredded white cheddar cheese
  • OPTIONAL: any other vegetables that you love.
Instructions
  1. Lay the sliced sweet potato on the bottom of your slow cooker in slices. Layer on top of each other if necessary. Try to distribute them evenly!
  2. In a pan on the stove, fry your bacon until it's crispy, and layer on top of the sweet potato in the slow cooker.
  3. In another pan, fry your onions, mushrooms and any additional optional vegetables. This will help release the flavours before you put them in the casserole!
  4. In a bowl, whisk your eggs (like you're going to scramble them!), and pour over the sweet potatoes, bacon and veggies in the slow cooker.
  5. Sprinkle the cheese over top.
  6. These only need 4 hours on low to cook. They are fantastic for brunch, or, if you have a timer or a 'warm' setting on your slow cooker, you can cook them overnight for breakfast the next morning.
